I found this recipe on www.reteteculinare.ro many years ago, and I’ve been making it for my guests ever since. It is the best option when you are in a hurry and have some leftovers in your fridge. It can also be made as a vegetarian version with corn, peppers and peas.
Ingredients:
- Eggs – 4
- Olive oil – 3 tbsp
- Flour – 100g
- Baking powder – 1 tsp
- Salt – A pinch
- Smoked ham – 150g
- Salami – 100g
- Pitted black olives – 100g
- Red pepper – Half
- Green pepper – Half
- Grated cheddar – 60g
Preparation: 10 minutes
Cook time: 45 minutes
Yield: 1 loaf

Instructions:
1. Dice the ham, salami, peppers and olives. Mix well the eggs until frothy. Pour in the oil, mixing some more in the processor.
2. Add sifted flour and baking soda. Add the rest of the ingredients and mix with a spoon. Season to taste.
3. Pour everything in a loaf tin buttered and floured and bake for 45 minutes.
